Turkey with Green Beans and Mashed Potato

Peel and cut the potatoes into small chunks and cook in a pan of boiling water with a little salt. When tender (10 minutes should be enough if the chunks aren’t too big), drain and mash with a fork to the desired consistency.

Cook the green beans in another pan of boiling water. When cooked as desired, remove the pan from the heat, drain, and set aside for later.

Wash and cut the mushrooms into chunks or slices. Mince the onion.

Heat a little olive oil in a large skillet. Add the onion and mushrooms and fry over medium heat for 8–10 minutes, stirring often.

Add the green beans to the skillet. Cook together with the mushrooms and onion for 3-4 more minutes, continuing to stir, and season with a little salt. Transfer to a bowl.

Use the same skillet to fry the turkey, cut into strips or bite-size pieces, or any way you like.

Serve the green beans, mushrooms, and onions on a plate. Add a serving of mashed potato, and finish with the turkey.
Tips & Tricks
For extra creaminess, add a little milk and butter to the mash (it will melt with the heat).
