Instructions

Rinse the quinoa under water. Pour two cups of water into a pot. When it begins to boil add the quinoa, a pinch of salt, and cook for approximately 20 minutes or until the seeds open. Remove, drain, and set aside.

Prepare the vegetables. Wash the scallion, separate into two parts: the white and the green. Slice thinly. Set aside. Dice the bell pepper into small cubes, peel the ginger using a spoon and dice into small cubes. Peel the garlic and finely chop. Set aside.

Make an omelet. Beat the eggs in a bowl with a fork, add salt and pepper to taste and add into a pan with hot oil. Flip several times using a spatula and then cut into medium size pieces once it's ready. Set aside.

Peel and clean the jumbo shrimp and then add salt and pepper. Drizzle some oil into a plan and once it's hot add the jumbo shrimp and cook for 3 minutes or until they begin to color. Remove the shrimp from the pan.

Using the same pan, add the vegetables you have prepared: the white part of the scallion, the bell pepper, the ginger, and the garlic. Cook for 4 minutes.

Add the cooked quinoa and stir with a spatula for 5 minutes until the quinoa frays a bit. Add the shrimp, the egg, the soy sauce, oyster sauce, some sesame oil, and mix well.

Sprinkle the green part of the scallion on top and mix while hot. Enjoy!

Tips & Tricks

In order for the quinoa to come out consistent, fry it while stirring frequently for at least 5 minutes on high heat.

You can substitute the shrimp for chicken, beef, pork, or tuna to give it a personal touch and to take advantage of the meat you love most.

If you don't have oyster sauce readily available you can use a pinch of raw cane sugar (whole cane sugar) or coconut sugar.

And, if you don't have quinoa you can use white or brown rice instead and your fried rice will come out equally as good.
