Pasta with Bell Pepper and Walnut Sauce

Wash and chop the red bell pepper and garlic into medium sized pieces.

Pour some olive oil into a pan and lightly fry the pepper and garlic over medium-low heat until they are tender.

While the vegetables are cooking (the bell pepper and garlic) take advantage of this time and cook the pasta in a pot with boiling water. Cook for the time indicated on the instructions. Once it's ready set aside a cup and a half of the pasta water.

Once the vegetables are ready add them into a blender along with the walnuts and a cup of the pasta water. Blend for several minutes, until the sauce is creamy and there are no pieces of walnuts left. Taste and adjust the salt if necessary. If you feel that the sauce is too thick you can add some more of the pasta water.

Mix the sauce with the pasta and serve.
Tips & Tricks
We used a large red bell pepper.
If you would like, you can roast the red bell pepper in the oven. You can also use a jar of roasted red bell peppers; they are sold at any grocery store.
