Spaghetti with Mushrooms and Pumpkin

Instructions

Put water to boil in a pot, once it begins to boil cook the spaghetti for the time indicated on the package. Once cooked, drain and set aside.

Cut the pumpkin into medium size cubes. Finely chop the the cloves of garlic, and lastly, wash and chop the mushrooms.

Add some olive oil into a pan. Lightly fry a clove of garlic. After about 1 minute add the cubed pumpkin and mushrooms with a pinch of salt. Sauté over medium heat for 10 minutes until they become tender.

Add some olive oil into another pot and lightly fry the other clove of garlic. Add the flour and oregano and sauté for 1 minute over medium heat. Start slowly adding the milk, stirring frequently. Let the mixture boil over low heat until it begins to thicken. Add some salt, and if you'd like, pepper. If there are lumps, you can blend the sauce in a blender.

Add the spaghetti in a bowl along with the pumpkin cubes and mushrooms and then pour the sauce over it all. Mix well before serving.
Tips & Tricks
If you like nuts, add a handful of walnuts on top of the pasta.
