Avocado and Hummus Vegetable Sandwich

Instructions

Spread some hummus on one of the slices of bread and the other with avocado.

Place half of the sliced cucumber and tomatoes on top of the hummus. Add some salt and finish by covering with the avocado slice.

Do the same for the other sandwich.
Tips & Tricks
If you cannot digest cucumbers well, try peeling them.
You can add a drizzle of olive oil if you would like, but if you plan on taking the sandwich someplace, take care that the oil doesn't drip and stain.
Add more vegetables or substitute some for the ones you have at hand. It will be perfect with sliced carrots, fresh spinach, or sautéed or roasted zucchini or bell peppers.
